Cheesy B.C. Halibut Chowder


2 lbs. halibut fillets(cut into bite sized pieces)

½ cup each finely chopped onion, red pepper, carrot and celery

6 tbsp.butter

3 cups chicken broth

¾ tsp.salt

½ tsp. white pepper

2 cups milk

4 tbsp. flour

2 1/2 cups shredded sharp cheddar cheese

1tbsp. parsley- finely chopped


Method: Saute  vegetables in a large sauce pan in 3 tbsp. of butter. Add halibut, chicken broth, salt and white pepper. Simmer, covered for 5 minutes( do not over cook)
Add milk and heat gently. Make a paste with remaining 3 tbsp. butter with flour and add to chowder. Cook and stir until slightly thickened. Add cheese and cook over low heat until cheese melts. Sprinkle with parsley. Enjoy! Makes 6 to 8 servings.
