B.C. Halibut with Garlic Cilantro Sauce


Ingredients: 

Two six ounce halibut fillets
Salt and pepper to taste(Montreal Steak Spice-substitute)

Season halibut with salt and pepper one hour. Place in refrigerator.
                 
Sauce ingredients:

2 cloves garlic, crushed

½ cup white wine or chicken stock

1 tbsp fresh cilantro, chopped

Juice of one lime

1 tsp. lime zest

2 tbsp olive oil


Method: Lightly oil an oven proof skillet with vegetable oil. Over medium-  high heat; sear each side of the halibut fillet. Roast halibut in a 425 degree oven for 10 minutes or until fish flakes easily. Do not overcook! Remove halibut from pan and keep warm. Add olive oil and garlic to pan and cook for two minutes. Add wine or chicken stock, cilantro, lime juice, lime zest and heat until hot but not boiling. Spoon sauce over fish. Serve with Basmati rice and a fresh green salad. Serves two. Enjoy!
