Corn Crusted B.C. Halibut


Ingredients:

2  six ounce halibut fillets

1 fresh lemon

¼ tsp white pepper

Salt (to taste)

¼ - ½  cup flour- for coating halibut

1 egg- lightly beaten

¼ cup milk

¾ cup crushed cornflake crumbs

¼ tsp. cayenne pepper

¼ cup grated parmesan cheese


Method:

Combine juice of one lemon ,white pepper and salt. Dip halibut fillets. Lightly dredge fillets in flour to coat. Combine egg and milk. Dip fillets in egg mixture. Combine cornflake crumbs, cayenne and parmesan cheese. Dip halibut in cornflake mixture and place on baking sheet. Bake in a 425 degree oven for 10 minutes or until fish is opaque. Do not overcook. Enjoy! Serves two.
