




Ingredients:
4 tbsp. Smoked Sockeye Lox- cut into small pieces
4 farm fresh eggs
2 tbsp. heavy cream or milk
Small pat of butter
¼- ½ tsp. dried dill or 1 tbsp. fresh dill finely chopped
4 tbsp. grated Mozzarella Cheese
Salt and white pepper to taste
Method:
This recipe is for two, but can easily be multiplied for a gang or the crew on a fish boat. Combine eggs and cream and whip together with a fork until frothy. Melt butter in a frying pan and add Smoked Salmon Sockeye Lox. Stir in egg mixture and scramble quickly. Add cheese, dill and salt and pepper when eggs are nearly done. I serve this with bacon, toast and fruit and it is always a hit. The eggs take 5 minutes from start to finish. Enjoy!
