Fresh Off The Boat” Halibut Surprise

Sauce: 

¼ cup finely chopped shallots

¼ cup white wine vinegar

¼ cup dry white wine (add an extra cup for the cook)

½ cup whipping cream 

Combine shallots and vinegar in heavy small saucepan.  Boil (reduce) until most of liquid evaporates, about four minutes.  Add wine; boil (reduce) until most of liquid evaporates, about three minutes.  Whisk in cream. Set sauce aside. 

Halibut: 4 servings- 6 ounce Halibut Fillets or Steaks  

Preheat oven to 375 degrees (F).  Place halibut on baking sheet and brush with one tablespoon of canola oil.  Sprinkle seasoning salt ( Hys is recommended ) on filets.  Bake until fish is opaque in center – approximately ten minutes. Don’t overcook. 

Bring sauce to simmer, add three tablespoons of chilled butter cut into pieces.  Remove from heat, add fresh parsley, diced tomato or Spinach for color.  Season with salt and pepper. 

Suggested Serving Method: 

Arrange halibut on garlic mashed potatoes, spoon sauce over top.  Serve with your favorite vegetable. Add a good quality dry white wine – for the cook and guests! The Surprise in this dish is that it is a very simple but elegant sauce to make and tastes marvelous with “Fresh Off The Boat” Halibut.
