Halibut Cheeks and Leeks

Ingredients:

1 lb. “Fresh Off The Boat Halibut” Cheeks

1 large Leek

2 tbsp. olive oil

1 tbsp. butter

Salt and pepper (to taste)

Method:

Wash your leeks well. Slice them thinly into rounds the size of a looney. Sauté in the olive oil until they are soft, but not limp. Add the butter. Season the cheeks with salt and pepper and place in pan. Cook until opaque.  Now the options:

  • Fresh lemon juice
  • White Wine
  • Your favourite salad dressing
  • Lime zest and coconut milk
  • Black bean sauce and maple syrup
  • What’s in your fridge

A wee bit of any of the above, or anything you choose works great. Try a tbsp. of Annie’s Organics Shitake Mushroom and Sesame Dressing. Just a little allows the flavour of the cheeks to stand through. Serves 2-3!
