Lemon Pepper Panko Panfry


4(6-8 oz) fillets of halibut

Lemon pepper seasoning (to taste)

Salt(to taste)

½ cup mayonnaise

1 egg

1 cup panko flakes (Japanese bread crumbs) *

Butter


Method:

Pre-heat oven to 400 degrees. Season halibut with salt and lemon pepper. Mix mayonnaise and egg together in a small bowl. Dip each seasoned fillet in mayonnaise mixture and then coat evenly with panko flakes. Place halibut on a baking sheet and dot top of each  fillet with a few pats of butter(optional). Bake for 10-12 minutes or until opaque. Do not over cook! Enjoy! Serves four.

(*You can find panko flakes in the asian section of most large grocery stores.)
