Side- Stripe Shrimp In a Pernod Cream Sauce

Ingredients:


1 pound large Side- Stripe Shrimp
2 tbsp. butter and 1 tbsp. olive oil
2 tbsp. chopped fresh parsley
2 tbsp. chopped fresh basil
½ tsp. dried tarragon
2 cloves garlic- minced
Salt and pepper to taste or Hys seasoning salt.
2-3 tbsp. Pernod ( local liquor store)
2-3 tbsp. heavy cream

Method:
Defrost shrimp by following “Fresh Off The Boat” defrosting tips for F.A.S. Shrimp. Refrigerate shrimp until ready to cook. In a large frying pan, melt butter and oil. Add minced garlic, herbs and shrimp all at once to a medium hot frying pan. Add salt and pepper or Hys Seasoning to taste. Stir fry quickly ( 2-3 minutes ) Remove shrimp from pan with a slotted spoon and place in a medium size serving bowl. Deglaze fry pan with the Pernod and cream. Pour sauce over shrimp and serve immediately. Wonderful with a green salad and a crusty bread for dipping. Enjoy!
