Alan's Prosciutto  Wrapped Halibut


Halibut fillets (thick fillets are the best for this recipe)

Prosciutto slices(Italian salt cured ham)

White pepper

Fresh lemon Juice


Method:

Sprinkle white pepper on each fillet that you are using. Take two prosciutto slices and wrap around halibut .Repeat this step with remaining fillets. Place each portion on a baking sheet. Bake for 10-12 minutes in a pre-heated 400 degree oven or until opaque. Do not over cook! Just before serving squeeze fresh lemon juice over each portion. Wonderful with a crisp Sauvignon Blanc Wine. Enjoy!
