4x4 Halibut Sauté


Ingredients:

4(6-8 oz) fillets of halibut

4 slices bacon ( bite-size pieces)

4 garlic cloves( finely chopped)   
      
4 tbsp sherry wine vinegar


Method: In a large frying pan sauté  bacon for a few minutes . Season halibut fillets with salt and pepper to taste. Sauté  halibut and garlic with the bacon until halibut is browned on both sides. ( A few minutes each side) Add the sherry vinegar to the pan and continue cooking until halibut is done. Do not overcook! Serves four.
