Freezing Tips  For Fresh Halibut and Salmon Fillets


I have found that an excellent way to freeze the fillets is by cutting them into individual portions. From each 5 pound bag of fish, there will be 10-12 generous portions. Wrap each portion size fillet tightly in saran wrap. Repeat. This will form a "skin like layer  that will help keep the product fresh frozen. Place each portion in the coldest part of your freezer. Once frozen, put 4 portions together in a freezer bag and seal tightly. The fillets will keep very well this way for 2-3 months. Perhaps longer. I have had a number of my customers try this method and they say it is the second best way to freeze fish fillets other than vacuum sealing. Enjoy!
