Unger Family Barbequed Salmon
Ingredients:
4 “ Fresh Off The Boat “Wild Salmon Fillets
½ cup fresh basil- finely chopped
2 cloves garlic- finely chopped
½ tsp. Spike Seasoning (found in the spice aisle
at most grocery stores)
¼ cup olive oil
1 tbsp white balsamic vinegar
Method:
Whisk oil and vinegar together in a small bowl. Add basil, garlic and spike seasoning to make a thick paste. Approximately 15-20 minutes before cooking salmon, spread basil/balsamic marinade over fillets and let marinate in refrigerator. When ready to barbeque, put fillets skin side down, over a medium hot barbeque. (close lid ) Cooking time will vary depending on the thickness of the fillets. (Approximately 10-15 minutes total cooking time.) This recipe also works well in a 400 degree oven. Serves four. Enjoy! Thank-you to Brad and Renee Unger for sharing this recipe.
