Halibut with Vermouth Sauce

Ingredients:

4 halibut fillets ( approx. 6-8 ounces each)
2 cups white vermouth
½ cup whipping cream
2 egg yolks
White pepper and salt ( to taste)
¼ cup finely chopped scallions
½ cup green seedless grapes( halved)

Method:

Place halibut fillets in a large frying pan and cover them with vermouth. Bring to a simmer on medium heat and cook until fish is just opaque. (5-9 minutes) Time will vary, depending on the thickness of the fillets.  With a slotted spoon, transfer cooked fish to a warm platter. 
Combine whipping cream and egg yolks and whisk mixture into the vermouth. Sauce will thicken when cooked over medium heat.( 2-3 minutes)Do not boil sauce! Season with salt and white pepper and add scallions and green grape halves. Coat each portion with a few tbsp. of sauce. Enjoy! Serves 4 .
