Halibut  with a White Wine Vinaigrette Sauce

Sauce:


¼ cup finely chopped shallots

¼ cup white wine vinegar

¼ cup dry white wine (add an extra cup for the cook)

½ cup whipping cream

Combine shallots and vinegar in heavy small saucepan.  Boil until most of liquid evaporates, about four minutes.  Add wine; boil until most of liquid evaporates, about three minutes.  Whisk in cream. Set sauce aside.

Halibut:

Preheat oven to 375 degrees (F).  Place halibut on baking sheet and brush with one tablespoon of canola oil.  Sprinkle seasoning salt ( Hys is recommended ) on filets.  Bake until fish is opaque in center - approximately ten minutes. Dont overcook.

Bring sauce to simmer, add three tablespoons of chilled butter cut into pieces.  Remove from heat, add fresh parley for colour.  Season with salt and pepper.

Suggested Serving Method:
Arrange halibut on garlic mashed potatoes, spoon sauce over top.  Serve with your favourite vegetables.  Add a good quality dry white wine - for the cook and their guests!
